Delicious Pancake Recipe Using Nutrient-Rich Einkorn Flour

Updated: Jul 9

Pancakes are one of those breakfast delights that everyone loves. They are simple to make and can be topped with anything from fruit to syrup. But what if you could take your pancake game to a whole new level? Enter einkorn flour—an ancient grain loaded with nutrition and flavor that can transform your pancakes into something special. In this post, we will explore the benefits of einkorn flour and share some tasty pancake recipes for you to try.

What is Einkorn Flour?

Einkorn flour comes from einkorn wheat, one of the oldest cultivated grains in history. Unlike modern wheat, einkorn is rich in essential nutrients, such as protein, fiber, and B vitamins. For instance, einkorn contains about 30% more protein than regular all-purpose flour. Its unique gluten structure may make it easier to digest for some, and it offers a hearty, nutty flavor that enhances traditional pancake recipes.

When you use einkorn flour in your pancakes, you are not only boosting taste but also benefiting from its rich nutritional profile—perfect for a wholesome breakfast.

Basic Einkorn Pancake Recipe

Ingredients

  • 1 3/4 cup (210g) einkorn flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon baking soda

  • 1 1/2 cup buttermilk (or dairy-free alternative)

  • 2 eggs

Instructions

  1. In a large bowl, mix the einkorn flour, baking powder, salt and baking soda until combined.

  2. In another bowl, whisk together the milk and eggs.

  3. Pour the wet ingredients into the dry ingredients, stirring gently until just mixed. A few lumps are fine!

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

  5. Pour about 1/4 cup of batter for each pancake. Cook until bubbles appear on the surface, about 2-3 minutes.

  6. Flip the pancakes and cook for another 1-2 minutes until golden brown.

  7. Serve hot with your favorite toppings!

Troubleshooting Common Issues

If your pancakes do not turn out perfectly, here are some simple fixes:

  • Too Thick Batter: Add a little more milk until it reaches your preferred consistency.

  • Pancakes Too Dense: Over mixing leads to denser pancakes. Mix just until combined.

  • Uneven Cooking: Lower the cooking temperature slightly if pancakes brown too fast. This helps cook them evenly.
